Supper Club Recipe with Lulu Bliss: Peanut Butter Cookies
I must admit I didn’t get the fuss of PB until moving to the United States, and now PB is a pantry staple (sorry Vegemite!) These PB cookies only have THREE ingredients – no need for flour! My sister won a blue ribbon at the Perth Royal Show using this recipe. If it’s good enough for CWA it’s good enough for me!
1 x Jar of Peanut Butter (approx. 375g)
1 x cup castor sugar
1 x egg
Chocolate chips, optional
Lulu's how to:
1. Preheat oven to 180C/ 350F and line a tray with baking paper.
2. Place all ingredients in a bowl and mix until well combined.
3. Using a cookie scoop (or teaspoon) form the dough into balls approx. 1-2” in size (you can make them as big or small you like) Place the cookies on the baking tray, and using a fork gently press each cookie down to make an indent. Bake in the oven for 15-20 minutes, transfer to a rack and allow to cool before serving.
